An English gin made by cold distillation under vacuum at close to freezing, a slower, more delicate process that preserves the fresh, volatile aromatics of its fourteen botanicals rather than driving them off with heat. The result is vivid and citrus-led, with juniper, lime and orange blossom staying bright rather than cooked. No resting in wood means what you taste is close to the botanicals themselves.
