The Malvasia and Chardonnay grapes used to make this extraordinary white wine are from trellis-trained vines in line with the regulations of the Balearic Islands Body for Organic Agricultural Production. The largest winery in Ibiza, Can Rich harvest their grapes by hand in August and transport them to the winery’s production area immediately to avoid oxidation, a practise which results in precise sharp wines.

This simple yet careful process produces a slightly cloudy straw-yellow wine. Aromas of lychees, peaches, roses or acacia flowers from the Malvasia grapes dominate, whereas Chardonnay is more noticeable in the mouth thanks to its strength and body. Seductive bitter hints also related to Malvasia appear and provide a contrast to the ever-present fruit, leading to a wine intense in aromas yet not too heavy. It’s clear but not excessive acidity highlights its body and adds length. Fine hints of fresh honey and mountain herbs also appear behind mature citrus fruit. With its dry and fine tannic finish, it is very moreish and also goes down well with a food partner.
